
Spicy Russian Toast

Ingredients
- Eskort 500g Smoked Russia, sliced
- 1 onion, chopped
- 1 red pepper, chopped
- 1 garlic clove chopped
- 1 tin peeled tomatoes
- 1 tin tomato puree
- 1 T paprika
- 1 T dried chilli
- Salt and pepper
- 4-8 Slices of Toast
- 2 C grated cheese (Cheddar)
- 4 fried eggs
- 1 tin baked beans
- 3 T oil for frying
Method
- Heat a pot over a moderate heat.
- Add the oil, onion, garlic and pepper to the pan and fry for 5 min.
- Add the sliced Russians, baked beans, peeled tomatoes, tinned tomatoes, paprika and dried chillies and allow to simmer for 10 min.
- Place the slices of bread on a baking tray and scoop spoons full of the Russian sauce.
- Top each toast with cheese and bake in an oven with the grill setting on high for 5 min.
- Fry the eggs to each person’s preference.
To serve
- Serve the spicy Russian toasts with the fried eggs for a quick and easy breakfast.
