
Pork Broth with Spinach

Ingredients
- 1Kg Eskort Frikkadel
- 2 bags Baby Spinach
- 1T Fresh ginger finely chopped
- 2T Chives chopped
- ½ C Spring onions chopped
- 2T Soy sauce
- 1 T Paprika
- 4C Beef stock (4 T beef stock powder dissolved in 4 C water)
- 2T Olive oil
- 1 onion cut into ¼ ‘s
- 2 carrots roughly chopped into 3 cm pieces
- 1 Garlic clove sliced
- 1 Bay leaf
- Olive oil for cooking
Method
- Heat a frying pan over a moderate heat, add the olive oil, carrots, onion and garlic to the pan and fry for 5 min.
- Add the beef stock, ginger, soy sauce and the bay leaf and let simmer for 20 minutes
- Pan fry frikkadels with some olive oil until cooked and remove from heat
- Add spinach and frikkadels to the hot broth and stir the spinach through.
Serve
- Garnish the broth with the chives and spring onion and serve.
