
Bacon, Banana and Brie with Whisky and Cumin Onion Marmalade

Ingredients
- Sandwich:
- 8 Banana bread slices – Your favourite store bought Banana Bread
- 400g Eskort Back Bacon
- 200g Black Brie cheese or Brie Cheese of your choice
- 60 ml butter
- Fresh rocket22
- Onion marmalade:
- 2 onions, sliced thinly
- 45 ml olive oil
- 30 ml ground cumin
- 60 ml whisky
- 125 ml brown sugar
- 5 ml vanilla essence
- 5 ml salt
- 15 ml vinegar
Method
- Onion marmalade:
- Heat a saucepan over a medium heat.
- Add the olive oil and onions and fry until the onions are golden and soft.
- Add the remainder of the ingredients and reduce the heat.
- Simmer for 10-15 min.
- Sandwich:
- In a frying pan over a high heat, fry the bacon until crispy.
- Layer the bacon and sliced brie on the banana bread and add the onion marmalade.
- Sandwich together with the remaining bread slice.
- In a large pan melt some butter in a frying pan and toast the sandwiches until the brie has melted.
- Serve with some rocket and extra onion marmalade
