
Bacon and Sage Shortbread

Ingredients:
- 200g Eskort Minced Bacon
- 125g Butter
- 55g Castor sugar
- 180 g flour
- 1t salt
- 1 t vanilla
- ¼ C sage
Method
- Preheat the oven to 190°C.
- Heat a frying pan over a moderate heat and fry the bacon until crispy.
- Remove the bacon from the pan and allow it to cool down.
- Place the butter, castor sugar, flour, salt and vanilla into a food processor and blend until a soft dough forms.
- Line a baking tray with baking paper and press the dough into the pan.
- The dough needs to be 1cm thick.
- Add the bacon and sage to the top and press it into the dough slightly.
- Bake the shortbread for 20 min.
Serve:
- Remove the shortbread from the oven and let it cool down.
- Serve this shortbread with your favourite selection of cheeses and of course some of Eskort’s premium sliced hams.
